Folded by hand, every morning
Krishna and Rita Shrestha brought the momos of Kathmandu to a gas station counter on Route 50. They named it after Everest, the top of the world, because that's where the food comes from.
The kitchen starts around 7 a.m., mixing the filling and folding every dumpling by hand. They started out selling 30 or 40 momos a day. Now it's well over a thousand, and people drive in from Maryland and West Virginia for them.
7 a.m.
Fresh filling: halal chicken or vegetables, cabbage, onion, cilantro and Himalayan spices.
Folded by hand
Every momo filled and pleated by hand at the counter.
Steamed to order
Hot from the steamer, with both sauces, until we sell out.
